Polpette Di Patate (Potato Balls) by Lara Marchini (ITALY)


POLPETTE DI PATATE (Potato Balls)


1 lb. potatoes,
3 eggs,
2 tbs olive oil,
salt,
pepper,
Parmesan cheese,
breadcrumbs.


Boil the potatoes and chop them. Add olive oil, salt, pepper and Parmesan. Beat the eggs in a soup plate; put the breadcrumbs in another plate. Make a lot of balls with the mixture and put each one first in the eggs and then in the breadcrumbs; fry in hot oil and enjoy!!!
