Sauerkraut by Ariënne Lindeijer (HOLLAND)

Sauerkraut (Sauerkraut, sausages, bacon, milk, potatoes, salt/pepper, butter)
Cook the potatoes in a pan with water with some salt and heat it high for 15/20 min.
Put the sausages with the sauerkraut in a pan and heat it low for 15 min.
When the potatoes and sauerkraut are done you drain the sauerkraut and mash the potatoes and sauerkraut with some milk and butter to make it smooth.
Bake the bacon and slice them in little pieces and put it in the sauerkraut.
(You can also put slices of pineapple in it)

Apple Puffs by Ariënne Lindeijer (HOLLAND)

Buy Puff Pastry ready frozen at Giant and also apple, raisins, apple saus, sugar, egg.
Lay the Puff Pastry out on your kitchen table to unfrost but put plastic on it or it will dry out. Make the apples in very small peaces and put the raisins, cinnamon and apple saus, sugar with it. Preheat the oven to 200C/400F.
Cut the Puff Pastry so you get 2 little peaces of Puff Pastry and put the apple stuffing in it and seal it.
Brush the Pastry with crushed egg and sprinkle some sugar over it and put the Pastry in the oven for 20/25 minutes.

Meat Puffs by Ariënne Lindeijer (HOLLAND)

Meat Puffs (Puff Pastry, beef, oil, shredded cheese, onions, Taco seasoning mix, egg)

Buy Puff Pastry ready frozen at Giant and also beef, oil, onions, Taco seasoning mix.
Lay the Puff PastRy out on your kitchen table to unfrost but put plastic on it or it will dry out. Make the onions in a pan with some oil and later put the beef in there with pepper and salt. When the beef is ready, put Taco seasoning mix over the beef.
When ready let the beef cool down.
Preheat the oven to 200C/400F.
Cut the Puff Pastry so you get 2 little peaces of Puff Pastry and put the beef in it and seal it. Brush the Pastry with crushed egg and sprinkle some cheese over it and put the Pastry in the oven for 20/25 minutes.

Apple Cheesecake by Dawna Dann (CANADA)

Crust:

1/2 cup butter or margarine
1/3 cup sugar
1/4 tsp vanilla
1 cup flour

Combine butter, sugar, and vanilla. Blend in flour. Spread over bottom and 1inch up sides of a 9 inch spring-form pan.

Filling:

2 reg packages of cream cheese
1/2 cup sugar
2 eggs
1 tsp vanilla

Beat cream cheese and sugar until well blended. Add eggs and vanilla. Mix well. Spread evenly over crust.

Topping:

1/3 cup sugar
1/2 tsp cinnamon
4 cups sliced apples
1/4 cup sliced almonds

Combine sugar and cinnamon – toss apples I mixture and place over filling. Sprinkle with almonds.

Bake at 450 for 10 minutes, then at 300 for 1 hour or until golden brown and set. Chill for at least 3 hours before serving.

Breakfast Casserole by Dawna Dann (CANADA)

6 eggs
2 cups milk
1/4 tsp salt
a sprinkle of dry mustard, and pepper
4 slices of bread - cubed
1 lb bulk sausage (I like Jimmy Dean regular breakfast sausage)
1 cup sharp cheddar cheese, grated

Brown the sausage and crumble. In a bowl combine eggs, milk, seasonings. Spread cubed bread over bottom of greased 13x9 dish. Spread drained sausage over bread, sprinkle with cheese, pour milk over top. Refrigerate overnight and bake at 350f for 45 minutes.

Turkish Spinach Pie by Ozzie Ozkok (TURKEY)



8 oz Olive oil/Butter

(Mix this with some milk and 1 egg. This is an oily sauce to butter the filo pastry leaves.)

8 X Filo pastry (Phyllo dough)

Sesame seeds

For the filling:

8 oz. fresh spinach

Salt and pepper

1 tablespoon oil

Minced garlic (4 piece) and onions (3 tablespoons)

½ table spoon ground cumin

Feta cheese - crumbled

Tomato paste (optional)

Preheat oven to 375 F

Trim spinach and wash it thoroughly. Put leaves in a large pan with no extra water but a little salt, and cook, covered, for 3-5 minutes, shaking pan occasionally, until leaves are soft. Drain Well.

Heat oil in a pan and saute sliced onion until starting to soften. Stir in garlic and cumin, and cook for 1 minute. (After that you can add tomato paste just to make it a little bit colorful and tastier.)

Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil sauce. Lay another sheet of phyllo dough on top, brush with olive oil sauce, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach, onions and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.

Optional: If you want it to be golden baked; brush the top surface of the pie with an egg yolk.

Sprinkle with sesame seeds, then bake in preheated oven for 30 minutes, or until golden brown and tender.
